Since the 90s, he’s played a major role in the development of sophisticated raw cuisine while building a company that now includes restaurants, academies, books, apps, and catering with a global reach. His goal is not only to make raw food gourmet, delicious, and fine-dining appropriate, but to make it accesible to all.
